Moroccan Tagine
Want a delicious super easy kid friendly one pot dish? You MUST try this! There was none left after a few extra helpings of this delicious Moroccan stew!
Moroccan Tagine
 Ingredients
    1 tablespoon olive oil (or any oil really)
    3 skinless, boneless chicken breast halves cut into bite size chunks & seasoned with salt/pepper
    1 onion - chopped
    3 cloves minced garlic
    1 small butternut squash or 2 large sweet potatoes peeled and chopped
    1 15 oz can garbanzo beans (chick peas) drained
    1 carrot - chopped and peeled
    1 14.5 ounce can diced tomatoes - do not drain
    1 14 ounce can (or 2 cups) vegetable broth
    1 tbs sugar
    Juice of small lemon
    1 tsp salt
    1 1/8 tsp ground coriander
    1 tsp Garlic Powder
    2 dash's of cayenne pepper
    1 dash of black pepper
    chopped fresh Parsley
Directions
1. Heat the oil in a large skillet, add your chicken, onion, and minced garlic, cook until browned.
2. Then add your squash or sweet potatoes, garbanzo beans, carrots, un-drained tomatoes, veggie broth, sugar, lemon juice , coriander, cayenne pepper & garlic powder to your pan. 
3. Cook until veggies are nice and tender, about half an hour depending on which veggie you chose. 
4. Top with fresh parsley.
NOTE: We use sweet potatoes in our home because butternut squash can never be found. When stores do have it , it is expensive. The potatoes never cost more than 2 bucks and the kids LOVE them. Can be made without meat. 
Side Suggestion: We like ours served over couscous with a side of Naan.
